Warning: Sausages, Hot Dogs, Bacon May Kill You

According to the Karolinska Institute in Switzerland has released a study that shows Nitrates and Nitrites increase the risk of Pancreatic Cancer by 20%.  In other words if a person who eats one sausage or 2 slices of bacon 3 days per week they will increase the chance of Pancreatic Cancer by 20%.

In 1998, the University of South Carolina revealed the results of a study that showed women who ate their meat "well done" were 462% more likely to develop Breast Cancer than women who ate their meat medium rare.

This information was recently announced by Dr. Joel Wallach who has been speaking about the spread of Cancer due to well done meats and nitrates and nitrites since the 1970's.  His work has been confirmed time and time again with almost no recognition of his excellent work.

Dr. Wallach who is known as "Dr. Mineral " admitted to taking twice the suggested amount of Selenium.  Dr. Wallach takes 1000 MG of Selenium per day as prevention against Cancer and other diseases.

A Letter To My Mom

Hi Mom,

I just wanted to drop you a little note.  First, I want to thank you for all your love, support and help.  It has really allowed me to do and learn things which I can pass on for generations to come.  Thank you so much.

It is said that at any given time we all have Cancer.  Our immune system is able to fight it off usually.  But unfortunately, many of us become overwhelmed and unable to recover.  The rates of Cancer have increased in the thousands of percentages over the last few decades.  The medical industry is predicting that in the near future 1 out of every 2 people will have a diagnosis of Cancer within his lifetime.  Sadly, the so called war against Cancer has only created an industry more concerned with profit rather than health.  They literally profit from the growth of the Cancer in the population.  Whereas Billions of Dollars are spent in research it really means that governments, institutions, pharmaceutical companies, medical professionals and many others benefit from the so called “War On Cancer”.  The Pink Ribbons unfortunately are a symbol of profit rather than hope.

But there is hope for those who understand the mechanism of Cancer in the first place.  Sadly, misinformation and disinformation has been successfully used to keep the population in a continuous loop of confusion.  Many believe that Cancer is genetic, that there is a component of pre-disposition along family lines.  The idea that diseases are genetic is a myth conceived of by followers of Darwinian theory as an excuse to explain why some should rule while others are disposable.  The latest cutting edge research and the subject of Dr. Wallach’s latest book is EPIGENETICS not genetics.

Epigenetics says that there are switches in the genes.  It says that those switches can be turned off and turned on.  Food and nutrition are the primary method of actuating those switches.  If you eat "The 10 Bad Foods" the switches that decide whether a cell will become Cancerous is turned to Cancer.  If you eat the “good” foods the switches are turned away from Cancer and other chronic diseases to health.  This is primarily determined by nutrition and its absorption. 

Cells turn Cancerous when they “learn” to metabolize sugar instead of oxygen.  Cancer cells can also be instructed to self-destruct in the presence of certain substances and under certain conditions.  This is called Apoptosis.  But when this mechanism becomes damaged cells can grow out of control and create a possibly fatal condition.

When a foreign invader comes into the body the immune system becomes mobilized and attacks the invader.  When that mechanism becomes damaged it too is possible for the immune system to malfunction either leaving the person exposed to foreign invasion or hyper vigilant attacking the body itself as in the cases of arthritis, asthma, lupus and many other autoimmune diseases.  The real question is how do these mechanisms become damaged and how to repair the damage and correct the malfunction?

As we talked about before, Free Radicals are every where.  But when you are involved in certain activities the exposure to Free Radicals are even more pronounced.  The sources of Free Radicals may be certain foods, synthetic clothing, synthetic products, pollution, smoke, electro-magnetic waves,  prescribed drugs, cigarette smoke, alcohol consumption, chemicals, cleaning solutions, psychological stress, etc.  If you fly a lot you are even more exposed to Free Radical damage.  Even breathing creates Free Radicals.  I am particularly concerned about my two sisters one of whom works in a library with lots of computers and the other who is in business and often travels.

The human body deals with Free Radicals by creating anti-oxidants.  In the super synthetic world in which we live of plastics, additives and man made substances the natural anti-oxidants are insufficient to deal with the Free Radicals we are exposed to.  In such cases we need supplemental anti-oxidants to offset the exposure.  How do we get those anti-oxidants?  How much do we need?

When exposed to Free Radicals cells can become damaged or destroyed.  This is called Oxidative Stress or Oxidation.  You see it when you see "age spots", "liver spots", wrinkles and so on.  When sugar is eaten and the cell membranes have been damaged due to oxidative stress excess sugar can not be metabolized and floats around in the blood.  This is called Type II Diabetes.  Peripheral blood vessels become damaged leading to Neuropathy.  Tissue destruction in the eyes lead to Macular Degeneration, Cataracts, Glaucoma.  In the heart there will be Cardio Myopathy, Congestive Heart Failure or some other heart disease.  Organs begin to fail like Kidney Disease.   All of the chronic / degenerative diseases are the result of Oxidative Stress including Cancer.  Therefore, the means of offsetting Free Radical Damage requires a strategy that is designed to deal with our exposure to Free Radicals.

When confronted with a degenerative or a chronic condition we have a four step strategy:

1. Eliminate the source of the damage
2. Correct any damage to the nutrient absorption system
3. Improve the absorption of nutrition the body needs to rebuild itself
4. Protect the body from further damage

In your case where you had an elevated white blood cell count, high blood pressure, hair loss, weight loss and fatigue we have eliminated the source of the damage by:

Black Garlic

A new discovery has come to light in the West.  It is called Black Garlic.  Black garlic is regular garlic transformed by enzymatic action.  Most people refer to this as fermentation.  However, true fermentation involves sugar and alcohol.  But the transformation of garlic into Black Garlic takes place under controlled conditions of heat, humidity and time.  This process has been patented in the U.S. with the only producer located in California.

Black Garlic

An old product. Originally from East Asia. Tastes good everywhere.

The cloves start hard, raw, pungent, white, then transform completely – soft, bold, and black, aromatic but not aggressive, like a sort of fruit with beautiful round acidity, notes of balsamic vinegar, molasses, liquorice, tamarind.

The basic technique is simple – place whole heads in a sealed container and keep at 60˚c for six weeks. One can keep them in for longer and they will mature further, but may also begin to dry out. What is interesting is that the process is not, strictly speaking, fermentative – the transformation is due not to microbial metabolism but in part to enzymatic breakdown (the heat denatures alliinase, the enzyme that converts non-volatile alliin into volatile allicin, the compound responsible for fresh garlic's pungency) and in part to the Maillard Reaction, a cascade of chemical reactions that produce the dark colour and complex, carmelised flavour.[i] The sulfurous compounds may also contribute to its anti-microbial properties in its blackened form.

Foods like this invite a larger discussion about the different degrees of 'fermentation' as a category. A biochemist might stick to the purest technical definition of the anaerobic conversion of glucose into ethanol and carbon dioxide (C6H12O6 → 2 C2H5OH + 2 CO2), while on the other end of the spectrum, a common understanding of fermentation might also include transformations due solely to chemical and enzymatic activity, even though they look, smell, and taste 'fermented' – like black garlic. We and others sit somewhere in the middle, understanding fermentation in the practicable sense as any interaction with microorganisms – bacteria, yeasts, and other fungi – with the purpose of transforming foods.

The principle may be simple, but like any process, the best results lie in obsessing over the details: here, controlling variations in temperature and humidity over time. We are continuing to tweak to discover the best possible product.

In addition to the garlic, we have been experimenting with other alliaceous bulbs. Onions, shallots, it works with them all. Shallots reveal their latent fragrant sweetness; onions intensify into bombs of savouriness; all become tinged with this dark, tart depth.

These larger bulbs work especially well in broths, a particularly effec
tive way to make a rich, full, dark stock. It also works well in broths with umami-bringing ingredients, like dried aged seaweeds and cured aged meats. And it is satisfying and dramatic with any fermented dairy product – creamy and fleshy, lactic and fruity, white and black.

Some of the cloves we dried and ground to a powder, adding them to salad dressings, sauces, and sprinkled on any number of things. The softer ones we passed through a sieve and pulled into a paste.

This one is best slathered on crisp toast with skyr, or on its own by the spoonful.

Because garlic contains sugars and amino acids, when garlic undergoes fermentation, these elements produce melanoidin, a dark-colored substance that is responsible for the color of Black garlic. The garlic is placed in extreme heat within a fermentation process lasting one month. It is then cooled and dried for another week. The method of aging garlic has been patented within the United States. The patent is titled "Process for preparing aged garlic" and cites the use of specially designed machines and environmentally controlled temperatures to achieve the black garlic state.

Description/Taste

Black garlic has the immediate appearance of an aged, almost burnt garlic bulb, its cloves loosely held within its indented browned outer wrapper. Inside a Black garlic bulb's wrapper of aged paper-thin skin are opal black cloves with the jellied texture of fresh dried fruit. The individual cloves have a savory sweet taste, a pleasant molasses undertone with a subtle hint of a soy sauce creating the complex flavor of umami.

Nutritional Value

Aging garlic at a constant temperature and humidity without adding any additives to raw garlic, increases polyphenol compound presence. Thus, aged Black garlic exerts stronger antioxidant effect compared to raw garlic, without decreasing the original effectiveness of the garlic.

Applications

Black garlic makes rich and complex purees and sauces. It can also be made into a butter compound, sauteed in oil, chopped or diced and added directly to pizzas, pastas, rice and legume based dishes. Black garlic is not a garlic variety, rather garlic in an aged state.
